Roy Choi's Spaghetti

A few years ago, John Favreau filmed the movie Chef.  Then, he filmed a cooking series called The Chef Show with Roy Choi who helped with the cooking elements of the original film.  One of the episodes focused upon Italian dishes.

Roy shared his recipe for Spaghetti and meatballs.  Below his the recipe for this Spaghetti sauce.  Given that I had to estimate the amounts for each ingredient while viewing the film, I am not sure if this recipe perfectly matches Roy's.  But, here we go.

  • 40 - whole cloves of Garlic.
  • 2 - cans of whole San Marzano tomatoes.
  • 24 - whole White Button Mushrooms.
  • 1-1-½ Cups Olive Oil.
  • 1 - pound Spaghetti.
  • 1 - wedge of Parmigiano Reggiano.
  • Chili Flakes.
  • Salt.
  • Pepper.
Procedure
  • Put the White Mushrooms in a sauce pan (whole) and cover with water.  Simmer until soft.
  • Put the Garlic cloves in a sauce pan (whole) cover with Olive Oil.  Simmer (confit) until soft under very low heat.
  • Once the above are ready, put the confited Garlic and Mushroom stock (do not add mushrooms) in a sauce pan.  Add two cans of whole San Marzano tomatoes and cook until tomatoes start to break down.
  • Boat motor the sauce fully until smooth.
  • Add saltto taste.
  • In a separate sauce pan, add pasta, then enough sauce to cover, add basil and transfer to a serving platter.

    Pam and Lil's Baked Beans

I have two friends, Pam Whalin and Lil McCarthy, who I met through the Elks.  Recently, they shared their recipes for their baked beans.  Pam's are a bit spicy, smokey, sweet, and salty.  Lil's are more like sweet baked beans. The recipes produce a large batch of beans.  Great for a group dinner or picnic.  I am not sure if reducing the amounts of the various incredients will result in the same tasting beans.  So, I would make the full batch for a large group and save the remaining leftover (possibly freeze) for future use.  One more important thing, the recipe calls for specific manufactures for some of the ingredients, I would NOT substitute.  Use the ones she recommends.

Yes, you can safely freeze baked beans.  But, you need to use the right process when freezing them.  Only freeze baked beans that have been fully cooked.  Make sure the cooked beans are cold before putting them into a freezer container.  Freeze the baked beans the same day they are cooked.  Leave room in the freezer container for expansion. When it is time to reuse the beans, allow them to thaw completely in the refrigerator overnight. Preheat them in a pan in the oven.  Enjoy
